Oat Cake with Pecan Crumble

    This is a lovely oat cake that has a pecan crumble on top that looks and tastes great. It can be either cake or dessert.

    Serves: 12 

    • 1 1/4 cups (120g) rolled oats
    • Oat Cake
    • 115g soft butter
    • 330ml boiling water
    • 1 cup (155g) brown sugar
    • 2 eggs
    • 1 1/2 teaspoons vanilla essence
    • 1 teaspoon cinnamon
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarbonate soda
    • 1/2 teaspoon salt
    • 1 cup (225g) flour
    • Crumble
    • 1/2 cup (90g) brown sugar
    • 2 teaspoons flour
    • 1/2 teaspoon cinnamon
    • 1/4 teaspoon nutmeg
    • 45g cold butter
    • 75g pecans, coarsely chopped

    1. Preheat oven to 180 degrees C. Grease a baking dish dish (23 x 30cm).
    2. Crumble: Mix the sugar, flour, cinnamon and nutmeg together. Add butter in small pieces and rub in with your fingers until it looks like breadcrumbs then add the pecans. Set aside.
    3. Oat Cake: Pour boiling water on the oats and set aside.
    4. Beat the butter and sugar until fluffy. Mix in eggs one by one. Add the vanilla and cinnamon.
    5. Mix the baking powder, bicarbonate soda, salt and flour together then mix evenly with the butter mixture. Put into the baking dish and smooth out.
    6. Spread the crumble evenly over the oatmeal mixture and bake for 35 minutes in the preheated oven until a toothpick comes out clean.
