    This is a wonderful sheet cake using ground hazelnuts. It cuts well into small portions perfect for pack lunches and picnics.

    Serves: 12 

    • 2 eggs
    • 200g sugar
    • 1 teaspoon vanilla essence
    • 1/2 cup (125ml) milk
    • 1 tablespoon rum
    • 2 cups (250g) flour
    • 4 level teaspoons baking powder
    • 250g ground hazelnuts
    • Icing
    • 1 teaspoon instant coffee
    • 1 tablespoon hot water
    • 1 cup (185g) icing sugar
    • 1 tablespoon butter, melted

    1. Preheat the oven to 180 degrees C. Grease a baking tray.
    2. Whisk the eggs with the sugar and vanilla until foamy. Add the milk and rum. Mix the flour, baking powder and the ground nuts into the mixture.
    3. Spread the mixture over the prepared baking tray and bake in the preheated oven for about 25 minutes.
    4. Icing: Mix the coffee with the hot water. Combine the coffee, icing sugar and melted butter; add hot water to achieve the desired consistancy.
    5. Immediately after baking, spread the icing over the cake. Leave to cool and cut into rectangles to serve.
