Oat Bran and Cream Cheese Muffins

    These are a great cheese muffin that is easy to make. Ideally they use Boursin cheese but if this cannot be found cream cheese is an alternative.

    Serves: 12 

    • 200g flour
    • 50g oat bran
    • 1 tablespoon baking powder
    • ½ teaspoon salt
    • ¼ teaspoon freshly ground black pepper
    • 1 large egg
    • 150g cream cheese, at room temperature
    • 180ml milk
    • 2 teaspoons chives, diced

    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat the oven to 180 degrees C. Line a muffin tray with muffin cases.
    2. Mix the flour, oat bran, baking powder, salt and pepper.
    3. Mix the egg with the milk and cream cheese then mix well.
    4. Fold into the flour mixture to create a uniformly moist mixture.
    5. Spoon the mixture into the muffin cases and bake for 30 minutes in the preheated oven until a toothpick comes out clean. Allow to cool on wire cake rack.

    Just like muffins should be! Easy and scrumptious. Can't wait to have these for lunch tomorrow at work, with a cucumber salad! However, I realize now that there's no mention of the chives in the preparation method...
