    A simple green salad using mixed green leaves and fresh herbs. Use a couple of chopped spring onions instead of the eschallot.

    Ingredients
    Serves: 4 

    • 1 small eschallot, finely diced
    • 1 1/2 tablespoons red wine vinegar
    • 1/4 teaspoon salt
    • 5-6 tablespoons extra virgin olive oil
    • fresh herbs, finely diced, parsley, chervil, marjoram, thyme or basil
    • 6 handfuls mixed green salad leaves
    • 1 pinch freshly ground pepper, to taste

    Directions

    1. Mix the eschallot, vinegar and salt in a small bowl then stir in the olive oil. Adjust seasoning with salt, pepper, vinegar or olive oil.
    2. Just before serving mix the salad leaves with fresh herbs then toss with the dressing. Season to taste with freshly ground pepper.
