Spiced Meringue Cake

    Flavoured with spices like cinnamon, cloves and vanilla this reminds me of Christmas but I make it all year round.

    Serves: 15 

    • 1 vanilla pod
    • 150ml red wine
    • 150ml orange juice
    • 2 tablespoons lemon juice
    • 1/2 lemon, zested
    • 1 cinnamon stick
    • 3 cloves
    • 250g butter
    • 1 cup (250g) sugar
    • 2 teaspoons vanilla sugar
    • 5 eggs
    • 400g flour
    • 1/2 teaspoon cinnamon
    • 1/4 teaspoon ground cloves
    • 1 tablespoon baking powder
    • Meringue
    • 3 egg whites
    • 2 teaspoons vanilla sugar
    • 1 teaspoon lemon juice
    • 1/2 teaspoon cinnamon
    • cinnamon for dusting

    1. Cut open the vanilla pod and scrape out the pulp. Add the red wine, orange juice, lemon juice and lemon peel to a saucepan. Add a cinnamon stick and cloves then boil slowly.
    2. Leave the punch to cool then pour through a sieve.
    3. Preheat oven to 180 degrees C. Grease a square or round cake tin.
    4. Beat butter, sugar and vanilla sugar until frothy with a hand blender. Stir in eggs. Mix in the flour, cinnamon, cloves and baking powder. Slowly mix in the punch.
    5. Pour in the batter into the prepared cake tin and bake in the preheated oven for about 75 minutes.
    6. When the cake is done remove it from the tin and cool on a wire cake rack.
    7. Whisk the egg whites with the lemon juice until very stiff. Then sprinkle in the sugar and cinnamon. Spread it around the cake and pull up small peaks with a spoon.
    8. Brown in the oven on the highest shelf and dust with cinnamon, if desired.
