    A very easy baked fish recipe, full of flavour, but extremely low in fat and calories. Serve with rice.

    Ingredients
    Serves: 4 

    • 700g trevally fillets
    • 450ml good quality tomato salsa
    • handful chopped fresh parsley
    • salt and freshly ground black pepper to taste

    Directions
    Preparation:5min  ›  Cook:30min  ›  Ready in:35min 

    1. Preheat oven to 180 degrees C.
    2. Place fillets in a lightly greased baking dish. Pour salsa over fish. Sprinkle with parsley, salt and pepper.
    3. Bake in preheated oven for 30 minutes. Serve warm over rice.

    I used cod that was about 2,5cm thick. It cooked perfectly in 30 minutes. My husband and I both said it was delicious! Took 5 minutes to put together. - 29 Sep 2008
