Kale and Blue Cheese Salad

    This is an unusual salad using kale which is a popular green in southern America but if you cannot get it use cabbage or spinach.

    Serves: 6 

    • 1 bunch kale
    • 1 teaspoon sea salt
    • 60g sunflower seeds
    • 1/4 red onion, finely diced
    • 60g sultanas
    • 1/2 apple, cut into 1cm cubes
    • 2 tablespoons apple vinegar
    • 50ml olive oil
    • 40g blue cheese, crumbled
    • 1 pinch salt and pepper, to taste

    1. Pluck kale leaves off the stalks and wash. Spin dry in a salad spinner or use paper towel. Pile leaves on top of each other, cut into thin strips and place in a large bowl. Add salt to the kale and mix for two minutes with your hands.
    2. Fry the sunflower seeds in a frying pan over a low to medium heat for a few minutes, stirring constantly until they change colour and begin to smell nutty.
    3. Place the kale into another bowl and tip away the liquid that has formed by mixing with the salt.
    4. Mix the onions, sultanas, apple cubes with the roasted sunflower seeds. Add vinegar and oil and mix well.
    5. Finally, stir in the blue cheese. Taste and adjust as required with salt, pepper, oil and vinegar.
