Hollandaise Sauce with Curry

    Hollandaise sauce is joined by curry, garlic and white wine to create a rich sauce that is delicious with asparagus, broccoli and cauliflower.

    Serves: 6 

    • 3 egg yolks
    • 3 tablespoons white wine
    • 150g butter
    • 1/4 teaspoon curry powder
    • 1/2 lemon, juiced
    • 1 clove garlic, finely diced
    • 1 pinch salt and pepper, to taste

    1. Whisk egg yolks then add the wine. Continue to whisk in a bain-marie until it thickens.
    2. Melt butter. Leave to cool a little then beat it into the egg mixture while still warm.
    3. Add curry, lemon and garlic then season with salt and pepper.
