Gruyere Cheese Fondue

Fondue is a nice thing to do with a group of friends over a winter dinner party. You can make it with all sorts of cheese but I think Gruyère is the best.


Serves: 4 

  • 20g butter
  • 1 clove garlic, finely diced
  • 300ml dry white wine
  • 250ml Kirsch or cherry brandy
  • 1 teaspoon lemon juice
  • 600g Gruyere or similar cheese, grated
  • 1 teaspoon cornflour
  • 1 pinch nutmeg, to tatse
  • 1 pinch freshly ground white pepper, to taste
  • 1 large baguette, diced

  1. Melt the butter in the fondue pot and fry the garlic a little but not letting it get brown.
  2. Add wine and Kirsch then bring to a boil. Add lemon juice.
  3. Mix the grated Gruyere with the cornflour and add to the fondue pot. Melt completely stirring constantly. Season with nutmeg and pepper.
  4. As soon as the fondue boils reduce the temperature and leave to simmer. It must always be simmering otherwise it will get stringy.
  5. Place on the fondue heater then serve with the diced baguette.
