Simple Basmati Rice

    This is a slightly more elaborate way to make your rice which involves soaking and then boiling but it makes a difference in the taste that your friends and family will notice.

    Serves: 4 

    • 1 1/2 cups (250g) basmati rice
    • 2 cups (500ml) water
    • 1 pinch salt
    • 30g butter, to taste

    1. Put the rice into a bowl and cover it with cold water. Leave it for 30 minutes (leaving it for longer won't do any harm).
    2. Pour rice into a sieve and pour cold water over it again. Leave it to drain and then place it into a heavy saucepan with water and salt; bring to the boil uncovered.
    3. As soon as the water starts to boil reduce the temperature and simmer for 15 minutes. Don't stir the rice.
    4. Try it after 15 minutes. If the rice is still hard add a couple of tablespoons of cold water (still don't stir) and simmer for a further 5-10 minutes.
    5. Remove from the heat and leave to stand for 10 minutes. You can now stir the rice or break it up with a fork and if desired stir some butter into it.
