Oven Baked Pancake

    This is an easy to make pancake that is baked in the oven, it works best in a cast iron pan. Normally I serve it with icing sugar but occasionally I serve it with nuts or butter and lemon juice.

    Serves: 4 

    • 60g butter
    • 1 cup (250ml) milk
    • 1 cup (125g) plain flour
    • 4 large eggs
    • To Serve
    • icing sugar, optional
    • walnuts, chopped, optional
    • lemon juice, optional

    1. Preheat oven to 220 degrees C and heat a deep, heavy frypan in the oven.
    2. Lightly whisk the eggs until foamy then stir in the milk. Slowly stir the flour into the batter.
    3. Remove the frypan from the oven and melt butter in it on the stove until the entire bottom of the frypan is covered with butter.
    4. Pour batter into the frypan then place the frypan into the preheated oven. Bake for 12-15 minutes until the pancake has risen, lightly browned and arches up the edge of the frypan.
    5. Cut into pieces, sprinkle with icing sugar or nuts and serve immediately.
