Spiced Chocolate and Rum Cake

This is really just a simple chocolate cake with some special subtle flavours added including rum, cinnamon, coffee and nuts.


Serves: 12 

  • 250g butter
  • 250g sugar
  • 5 eggs
  • 100g ground nuts, walnuts, almonds or hazelnuts
  • 2 teaspoons cinnamon
  • 2 tablespoons cocoa
  • 2 shots (90ml) rum
  • 125ml lukewarm coffee
  • 2 cups (250g) plain flour
  • 5 teaspoons baking powder
  • chocolate icing or ganache, optional

Preparation:20min  ›  Cook:50min  ›  Ready in:1hour10min 

  1. Preheat oven to 180 degrees C and grease a round baking tin.
  2. Beat butter until fluffy then gradually beat in sugar and eggs.
  3. Add in order the nuts, cinnamon, cocoa, rum and lukewarm coffee.
  4. Mix flour and baking powder then gradually add to the mixture.
  5. Pour the mixture into the prepared tin and bake in the preheated oven for about 50 minutes.
  6. Let cake cool and enjoy as is or cover with icing or ganache as desired.
