Spinach and Zucchini Soup

This is a simple vegetarian soup for the whole family with zucchini, spinach, potatoes and finished with cream.


Serves: 4 

  • 2 tablespoons oil
  • 500g zucchini, diced
  • 1 onion, coarsely diced
  • 150g spinach
  • 1 potato, peeled and diced
  • 1 tablespoon parsley, finely diced
  • 1 litre vegetable stock
  • 200ml cream
  • 1 pinch salt and freshly ground black pepper, to taste

  1. In a saucepan heat the oil and saute the zucchini and onion until the onion is translucent.
  2. Stir in the cream and heat but do not boil. Season with salt and pepper.
  3. Add the spinach, potato, parsley and stock and simmer for about 20 minutes.
  4. Puree in a food processor or using a hand blender.
