Creamy Bacon Chanterelles


    This is a wonderful way to cook chanterelle mushrooms. Bacon, sour cream and onion all combine to create a rich sauce. This can be served with pasta, vegetables or on toast.

    Serves: 4 

    • 750g chanterelles
    • 125g smoked bacon, diced
    • 3 onions, finely diced
    • 2 teaspoons plain flour
    • 1 cup (250ml) sour cream
    • 1 pinch salt and freshly ground black pepper, to taste
    • 1 sprig fresh parsley, diced

    1. Clean and cut the chanterelles into pieces.
    2. Fry the bacon over medium heat. Add the onions and fry until translucent. Add the mushrooms and sauté for 15 minutes in a covered pan.
    3. Mix the flour with the sour cream and add to the mushrooms. Season with salt and pepper then stir in parsley right at the end.
