This is a nice change to a plain potato cake (or rosti) using carrot as a variation. It can be a vegitarian meal or a side to a meat dish.


Serves: 2 

  • 300g carrots, peeled and grated
  • 250g potatoes, peeled and grated
  • 1 onion, finely diced
  • 2 eggs
  • 2 tablespoons flour
  • 2 tablespoons sunflower seeds
  • 1 pinch salt and pepper, to taste
  • 1 pinch nutmeg, to taste
  • oil, for frying

  1. Mix the grated carrots, grated potatoes, onions, eggs, flour and sunflower seeds then season with salt, pepper and nutmeg.
  2. Form small hash browns. Heat oil in a frying pan and fry the hash browns on both sides until golden brown.
