Any Berry Ice Cream

    This is a versatile recipe for ice cream that can use raspberries, blueberries or any other berry or berry combination. It is important to boil the berries to maximise flavour.

    Serves: 8 

    • 500g berries
    • 200g sugar
    • 475ml sour cream
    • 115ml thickened cream

    1. Boil berries if possible without any liquid until they have all burst and released plenty of juice. Strain through a sieve. You should get about 350ml of thick berry concentrate. Allow to cool.
    2. Mix the berry concentrate with the sugar then stir in the sour cream and cream. Mix everything thoroughly and leave in the refrigerator for a few hours to cool down.
    3. Prepare the ice cream according to the instructions given by the ice cream machine's manufacturer. Store in tightly sealed container in the freezer.
