Raspberry Cream

    This is a quick dessert with infused berries and cream that you can eat straight away or freeze for later. You can also use other berries instead of raspberries.

    Serves: 4 

    • 300g frozen raspberries
    • 100g sugar
    • 150ml cream

    Preparation:5min  ›  Ready in:5min 

    1. Mix the frozen raspberries and sugar in a blender until the raspberries are coarsely diced.
    2. While the mixer running slowly pour the cream in and mix until well combined.
    3. Serve immediately or freeze for later, it lasts for up to a week.

    I did try this but I had to split the quantities in half and do it twice. The frozen raspberries are just too dry to blend all in one go! I did use low fat yoghurt instead and it was amazy!!  -  21 Jul 2011  (Review from Allrecipes UK & Ireland)
