Chicken schnitzel. Crumbed with almost every/any thing but breadcrumbs! NOT carved in stone with ratios! Have fun with whats available.... herbs? Don't matter much... bread type isn't too important either. Great basic recipe to play with and IDEAL for beginner cooks especially. Serves 4 hungry blokes or 8 people

Serves: 4 

  • 4 skinless chook fillets
  • 5 slices day old (preferably) grain bread
  • 1/4 cup each sesame seeds, cashew nuts, peanuts
  • 1/4 cup each any fresh mixed herbs ( I like parsley, chives & rosemary)
  • 1/2 cup or so of plain flour
  • salt & pepper to taste
  • 4 eggs beaten
  • 1/2 cup your preferred oil

Preparation:20min  ›  Cook:20min  ›  Extra time:1hour chilling  ›  Ready in:1hour40min 

  1. Using food processor crumb bread finely; remove to bowl. Chop cashews and herbs in food processor; remove to bowl
  2. Skin the chook fillet. Lay flat on a cutting board and slice in half lengthwise.( Makes 4 fillets go further)
  3. Dip the fillets in the beaten egg wash then press into crumb mixture firmly
  4. Chill for at least an hour in fridge, covered in cling wrap.
  5. Fry hot and quick in pan. drain on paper.
  6. i suggest serving with mashed spuds and 3 veg for starters.............. THEN PLAY WITH IT!!!!!! Great cold too

I used rosemary, sage and a bit of oregano, but forgot to put the flour in. Oh well, it still tasted great! Very easy to do. - 23 Oct 2012
