Lovely light and tangy afternoon tea cake. Simple to make but has a beautiful taste.

Makes: 1 cake

  • 125g butter
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 2 tsp grated orange rind
  • 2 tsp grated lemon rind
  • 1 1/2 cups self raising flour

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Cream butter and sugar. Add eggs one at a time beating well after each addition.
  2. Gradually fold in flour, milk and rinds.
  3. Pour into greased and floured or lined 20cm cake tin. Bake at 180 degrees C for about 20 min or until cooked.
  4. Ice with lemon icing when cool.
