Dads' Stuffed and Baked Pumpkin

    Whole Jap pumpkin baked in oven stuffed with capsicum, corn, cream cheese, mushrooms and bacon. My whole family love this recipe so much, I make it every week.

    Serves: 6 

    • 1.5 kg whole Jap pumpkin
    • 125g tin diced mixed capsicum
    • 200g tin creamed corn
    • 100 grams cream chese
    • 2 tablespoons finely chopped fresh chives
    • 3 rashers bacon finely chopped
    • 1/2 cup dried breadcrumbs
    • 190g tin champignons - pieces & stems

    1. Preheat oven to 120 degrees celcius.
    2. To prepare pumpkin, cut out top of pumpkin to create a lid and set aside . Scoop out seeds from centre of pumpkin and any remaining on "lid" .
    3. Combine all other ingredients in a bowl and mix well.
    4. Spoon all combined ingredients into pumpkin centre and replace "lid"
    5. Place pumpkin on baking tray with cooking rack and bake in preheated oven for approximately 1 1/2 hours
    6. Pumpkin is cooked when a carving fork pushed into the pumpkin enters and can be withdrawn easily with no resistance
