Mixed Berry Cheesecake

    A delicious baked cheesecake made with fresh or frozen berries and ricotta to keep it light. It's baked in a water bath to get its special texture.

    Serves: 10 

    • 200g digestive or plain biscuits
    • 75g butter
    • 2Tbs caster sugar
    • 250g cream cheese
    • 250g ricotta cheese
    • 3 large eggs
    • 3 large egg yolks
    • 150g caster sugar
    • 1 Tbs vanilla essence
    • 1 Tbs lemon juice
    • 1 cup fresh or frozen mixed berries

    1. For the base: Crush the digestive biscuits. Melt the butter and add this and the 2 tbs of sugar to the crushed biscuits.
    2. Mix well and place at the bottom of a springform cake tin pressing down very well. Place in the fridge while preparing topping.
    3. Mix the cream cheese and ricotta until smooth.
    4. Add the eggs and egg yolks, sugar, vanilla and lemon and stir to mix.
    5. Finally fold in the fruit then place mixture in tin on top of chilled base.
    6. Wrap tin in several sheets of strong kitchen foil and place in a roasting dish.
    7. Fill roasting dish half full with boiling water to create a 'bain marie'. Place in oven at 180 degrees for 50 mins.
    8. When set take out and allow to cool then place in fridge to chill before serving.

    Not hapy that when I clicked the printer friendly page, I ended up with 6 pages!!! 5 of which were just computer/interenet jargon!!! Whats with that???  -  06 May 2011
