Josh's Sweet n Sour Stir-fry

    An easy sweet n sour vegetarian stir-fry with tofu, snow peas and celery - flavoursome served on on rice.

    Serves: 4 

    • 2 sticks celery, finely sliced
    • 1 onion, chopped roughly
    • 2 cloves garlic
    • tablespoon olive oil
    • 1 cup sweet n sour sauce
    • 100 g firm tofu, cubed
    • 1/2 cup fresh snow peas, diced

    1. Put a cup of rice with water and simmer about 15 minutes until cooked.
    2. Chop vegetables, heat some oil and stir-fry celery and onion first, then add garlic, snow peas (which need less cooking), finally add tofu and sauce, and simmer covered for 5 minutes further.
    3. Serve with rice, sweet chili sauce if desired
