Simple delicious pudding for these cold winter nights. It's like an apple pie but rolled and baked.

Serves: 4

  • 1 cup water
  • 1/2 cup sugar
  • 1 tablespoon golden syrup
  • 1 cup flour
  • 55g butter
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 3 or 4 apples (depending on size)
  • 1 teaspoon mixed spice

  1. Boil together the golden syrup, water and sugar. Set aside.
  2. Make a dough with the flour, butter and baking powder and salt. Use a whizz if you have one.
  3. Roll out to about 9 inches or 23cm square and spread thickly with grated apple sprinkle with spice and roll up, then cut into slices.
  4. Place in a greased pie dish cut side up and pour over the syrup. Bake at 180 degrees C for 45 mins.

For an adult dessert add some brandy or rum to the liquid decreasing the volume of water. Also substitute butter for margarine for dairy free.
