Creamy Pesto Chicken

    Bite size pieces of chicken breast in a creamy red pesto sauce. This makes an easy but special weeknight dinner - ready in 20 minutes.

    Serves: 2 

    • 2 small chicken breasts (Sliced)
    • 1 red onion (sliced)
    • 2 garlic cloves (finely chopped)
    • 100ml dry white wine
    • 2 tablespoons balsamic vinegar
    • 2 tablespoons tomato puree
    • 2 tablespoons red pesto
    • 100ml creme fraiche or sour cream

    1. In a large pan, seal the chicken in a little olive oil then add onion and cook gently for about five minutes. Add the garlic and cook for another minute.
    2. Add the wine and vinegar, stir and reduce for about 5 minutes then stir in the tomato puree and pesto, cook for a minute then stir in the creme fraiche and heat through.
    3. Serve with fresh pasta and a little Parmesan.

    Delicious.. added a little fresh cracked pepper and used Greek yogurt instead of sour cream  -  05 Jan 2014
