Gluten-Free Dairy-Free Jam Drops

    A classic morning or afternoon tea treat. Yummy Jam Drops converted to gluten and dairy free. Use different types of jam in the middle.

    Makes: 24 

    • 100g dairy free margarine
    • 1/2 cup raw sugar
    • 2 teaspoons vanilla essence
    • 1 egg
    • 1 cup rice flour
    • 1 cup corn flour
    • 1/2 cup tapioca flour
    • 2 teaspoons baking powder
    • 1 teaspoon (per jam drop) of jams of choice

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 160 degrees C. Line baking trays with baking paper.
    2. Cream sugar, margarine and vanilla essence, add egg. Sift flours into bowl, add baking powder and mix. If mix feels too sticky add a little more corn flour to stiffen.
    3. Using a teaspoon scoop small amounts of mixture and roll into balls, flattening gently onto baking trays.
    4. Poke your pinky into centre to form a hollow. Fill the hollows with jams of choice, use at least 3 different jams to offer a selection if you like.
    5. Bake for 15 mins. Let cool on cake rake before gobbling the lot!

    these are really yummy bikkies. I like this recipe because you get to use the flour that you have stored in your cupbord from cooking other gluten free goods.  -  10 Aug 2010


    Used different ingredients. i didnt have any tapioca flour so i used arrowroot powder and they still worked out fine  -  10 Aug 2010
