    Chilli Con Vegetarian 'Carne'

    This quick and easy chilli recipe is a great weeknight dinner! You can even use it to top jacket potatoes.

    Serves: 8 

    • 1 onion, chopped
    • 5 cloves crushed garlic
    • 1 stalk celery, chopped
    • 1 tablespoon olive oil
    • 300g vegetarian mince
    • 4 tins (400g) kidney beans
    • 1 tin (400g) chopped tomatoes
    • 1 litre water
    • 1 tablespoons dark brown soft sugar
    • salt and freshly ground black pepper to taste
    • 2 teaspoons chilli powder

    Preparation:30min  ›  Cook:40min  ›  Ready in:1hour10min 

    1. In a large saucepan sauté onion, garlic, celery and olive oil until onions are soft.
    2. Add the vegetarian mince, kidney beans, tomatoes, water, sugar, salt, pepper and chilli powder.
    3. Stir occasionally, let simmer for 30 minutes.

    absolutely love this, so easy, filling and the family loves it even my 18 months old baby. finding vege mince is another story lol, since my baby is wheat/gluten intolerant it makes it difficult. I also add more spices such as cumin into the mix and yummy! - 10 Oct 2010
