Fillet Steak Canton Style

    Stir-fry fillet steak Cantonese style, marinated for an hour then served with a simple but delicious sauce.

    Serves: 4 

    • 500g fillet steak
    • 1 1/2 teaspoons cornflour
    • 2 teaspoons soy sauce
    • 1 egg yolk
    • 1/4 teaspoon bicarb soda
    • 2 teaspoons peanut oil
    • 1/3 cup water
    • 1 tablespoon oil
    • 1 thin slice root ginger crushed
    • For the Sauce
    • 2 teaspoons soy sauce
    • 2 teaspoons BBQ sauce
    • 1/4 teaspoon salt
    • 1 tablespoon water

    1. Cut steak across grain in 5mm slices, flatten with mallet. Combine cornflour, soy sauce, egg yolk, bicarb, peanut oil and water in a bowl mix till smooth, add steak and marinate for 1 hour, basting now and then.
    2. Heat oil in wok with ginger, when hot add steak a few at a time and stir fry 2 mins on each side till all meat is cooked. Add sauce and stir fry for another min. Spoon steak and sauce onto plate.
    3. Combine all the sauce ingredients; mix well and set aside.
