I made this for my wife's family. Her mother and aunt have celiac. I deep fried it in corn oil and made fresh chips from Yukon gold potatos. My petite mother in law who barely eats anything on a regular basis, ate 6 pieces of fish. She's currently going through chemo, so I was very happy to see she had an appetite. Excellent, I used Club House Pepper Medley and Club House Garlic spice for seasoning. Next time I will only use 2/3 cup rice flour (possibly only 1/2). Also cooked for 3 minutes on the last set and it was beautiful! Tried 5 min. And 4 min. both times still had dark spots on the first side, 3 min. worked very well! - 27 Jul 2016
