Pumpkin, Feta and Coriander Soup

    Serves: 4 

    • 1 large butternut pumpkin
    • 200g feta
    • 1 bunch coriander
    • 2 onions
    • salt and papper to taste

    1. Chop butternut pumpkin into large segments, and remove skin and seeds. Peel and chop onions.
    2. Place butternut pumpkin segments into large saucepan of water. Add onion and bring to boil.
    3. Roughly chop coriander and set aside.
    4. Once pumpkin is soft, strain pumpkin and onion. Place into blender.
    5. Add chopped coriander to blender (saving a small amount for garnish).
    6. Chop feta into pieces approximately 2 x2 cms, and add to blender.
    7. Blend until smooth. Add salt and pepper to taste, and blend through.
    8. Serve with warm crusty bread, and garnished with fresh coriander.
