    Meatballs with rice simmered in a tomato soup based sauce. Very quick and easy dish to make for the family. Also an easy recipe to get someone else at home to cook to give mum a break. Don't be afraid to experiment this is a basic recipe.

    Makes: 6 

    • 1kg premium mince
    • 1 cup uncooked rice
    • 2 eggs
    • 2 crushed garlic
    • good dollop Worcestershire sauce to liking
    • salt and pepper
    • flour for rolling meatballs
    • 800ml tinned tomato soup
    • 800ml water
    • 1 onion, chopped (optional)
    • 1/4 small cabbage chopped (optional)
    • a splash Tabasco Sauce (optional)

    1. Warm soup and water in a large pot while preparing meatballs (be careful not to boil soup at this point). This helps to hold the meatballs together as soon as they are placed into mix.
    2. To make meatballs; mix all ingredients well with the exception of the onions and cabbage.
    3. Divide mix into large meatballs - or the size of your liking - and roll into flour.
    4. Place meatballs into warmed soup mix. Do not move meatballs in mix as yet as this can break up balls before they are able to hold their own...this can be done after a couple of minutes.
    5. If you wish you can now add the optional chopped onion and cabbage on to the top of the meatballs before gently folding through.
    6. Simmer uncovered to approx. 30 minutes or until sauce is thickened to your liking.

    Serving suggestion

    Serve with mashed potatoes.


    Taste better if made earlier. Or even better served on toast as a leftover.
