Fried Zucchini with Fennel

    This is a wonderful way to cook zucchini as a side with a little bit of difference. Perfect accompaniment when cooking a special dinner.

    Serves: 4 

    • 500g zucchinis, a mixture of green and yellow if possible
    • 90g butter
    • 3 teaspoons fennel seeds
    • 1 small onion, finely diced

    1. Cut the zucchinis in half lengthways. With a vegetable peeler shave each halve into long ribbons.
    2. In a wide based non-stick frying pan melt the butter then add the fennel seeds and the onion.
    3. Add the zucchini ribbons and toss the zucchinis in the butter gently until they start to turn translucent. Serve immediately.
