Potato and Lentil Soup

This is a lovely thick lentil soup with chunks of potato throughout. Serve with fresh bread topped with melted cheese.


Serves: 12 

  • 2 beef stock cubes
  • 2 1/2 cups (500g) red split lentils
  • 6 carrots, diced or grated
  • 1/2 turnip, cut into small chunks
  • 1 leek, diced
  • 1 onion, finely diced
  • 1 pinch salt and pepper, to taste
  • 4 potatoes, cut into small chunks

  1. Bring a large saucepan of water to the boil then add the the stock cubes. Stir until the cubes have dissolved.
  2. Add the lentils, carrots, turnip, leek and onion and then season and stir.
  3. Leave to simmer on a low heat for about 3 hours.
  4. Mash with a potato masher to break it up a bit or use a blender.
  5. Add the potatoes.
  6. Leave to simmer for another hour then serve.
