Blueberry and White Chocolate Biscuits

    A great lunch box treat these tasty blueberry and white chocolate biscuits are easy to make and fun to eat.

    Serves: 25 

    • 220g unsalted butter, softened
    • 1 cup (220g) caster sugar
    • 170ml condensed milk
    • 3 cups (375g) self-raising flour
    • 150g white chocolate, chopped
    • 175g blueberries

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Preheat the oven to 180 degrees C.
    2. In a large bowl cream the butter and sugar until pale and then stir in the condensed milk. Sift in the flour and then work into a soft dough using your hands. Mix in the chopped white chocolate.
    3. Take a small handful of dough and flatten with your fingers. Place 2-3 blueberries into the centre of the biscuit and fold over the sides of the dough to encase the blueberries. Repeat with the remaining dough.
    4. Place onto baking paper lined baking trays spacing well apart then bake for about 15-18 minutes or until golden brown at the edges but still a little soft.
    5. Leave to cool slightly and set before transferring to a cake rack.

    If you have a sweet tooth try these These taste absolutely amazing. One of the best cookie recipes I've made. The one downer is that its a very messy mixture but some people love that. Apart from this I LOVE this recipe  -  12 Feb 2011  (Review from Allrecipes UK & Ireland)
