This Welsh boiled fruit cake is easy to make and is best served a day or so old, sliced, with plenty butter on top.


Serves: 10 

  • 1 cup (155g) currants
  • 1 cup (155g) sultanas
  • 1 cup (220g) sugar
  • 1 cup (250ml) water
  • 90g margarine
  • 2 cups (250g) self raising flour
  • 1 pinch salt, to taste
  • 1/2 teaspoon bicarbonate of soda

  1. Place sultanas, currants, sugar, water and margarine into a saucepan and bring all ingredients to a boil stirring regularly. Simmer for about 5 minutes.
  2. Pour the mixture into a bowl and add flour, salt and bicarbonate of soda then mix well.
  3. Pour into a loaf tin and place in a preheated 180 degrees C oven for 75 minutes. Use a skewer to pierce cake and if it comes out clean the cake is cooked.
