Prawns with Couscous

This is a lovely colourful dish that is made with simple ingredients and then served warm, perfect for a summer's afternoon.


Serves: 2 

  • 75g couscous
  • 1 tablespoon olive oil
  • 1 clove garlic, crushed
  • 250g cherry tomatoes, halved
  • 1 red capsicum, diced
  • 400g raw large prawns
  • 1 pinch salt and freshly ground black pepper, to taste
  • 1 pinch dried oregano, to taste
  • 2 to 4 tablespoons parsley, diced
  • 1 lemon, juiced

  1. Prepare the couscous according to packet instructions.
  2. Heat the olive oil in a large frying pan over medium high heat. Add the garlic, tomatoes and red capsicum then cook until tomatoes have softened; about 3 minutes.
  3. Add the prawns and stir to combine. Season with salt, pepper and oregano. Cook until the prawns are done and bright pink in colour; about 5 minutes.
  4. Take off the heat and add the couscous, parsley and lemon. Toss to combine and then season to taste.
