Simple Fruit Cake

    This is a very simple fruit cake that can be made quickly and easily. You can make your own mixed fruit or buy it pre-mixed.

    Serves: 12 

    • 2 cups (250g) self-raising flour
    • 1/2 cup (125g) caster sugar
    • 2 cups (375g) mixed dried fruit
    • 2 eggs
    • 125g melted margarine or butter
    • 1/4 teaspoon mixed spice
    • 1/4 teaspoon grated nutmeg
    • 1 pinch salt, to taste
    • 1/2 cup (125ml) milk
    • 1/4 teaspoon vanilla or almond essence

    Preparation:15min  ›  Cook:1hour30min  ›  Ready in:1hour45min 

    1. Preheat oven to 150 degrees C. Mix all ingredients together for at least 4-5 minutes.
    2. Turn into a greased and lined cake tin.
    3. Bake for 1 1/2 -2 hours at 150 degrees C. Check at 1 1/2 hours with a skewer to see if done

    I have been searching for an easy light fruit cake recipe for a long time. This is it. I made some adjustments, used five spice powder, and soaked my fruit in rum. (Always have some in the fridge in a bottle soaking). Vanilla & pinch of salt was also added. I mixed all the ingredients in my food processor for a few minutes then added the fruit last, then pulsed that in. Yum. This is the best fruit cake recipe I have ever made.
