This recipe is perfect for a special dinner or party. Made and served in individual glasses they can be prepared well in advance and kept until needed.
2 egg whites
4 egg yolks
1 1/4 cups (220g) icing sugar
200g sponge fingers
200ml strong coffee, room temperature
200g dark chocolate

In a bowl beat the egg whites to stiff peaks.
In another bowl whisk the yolks and icing sugar together until smooth.
Add the Mascarpone to the egg yolks then fold in the egg whites.
Lay out 8 individual serving glasses or ramekins.
Soak the biscuits in the coffee and lay in the bottom of each glass. Top with a layer of the Mascarpone mixture. Grate some dark chocolate over the top.
Repeat layers until all ingredients are used ending with a Mascarpone layer topped with a bit of grated chocolate.
Refrigerate for at least 2 hours before serving.
Great recipe - made it a few times now, quick, easy and very tasty. Tastes great the day after when the coffee has soaked through better.

used sponge cut up, do not soak just do a quick dip into coffee/brandy mix. Added brandy to the coffee instead of the mixture. Yum some of the brandy dripped to the bottom of the margarita glass which added a real punch
