    An easy bean recipe for the slow cooker, with only a few ingredients and simple spices. Good to eat as is with rice or in tacos or nachos.

    Ingredients
    Serves: 4 

    • 1 (400g) tin black beans or red kidney beans
    • 1 (400g) tin pinto beans
    • 1 (400g) tin cannellini beans
    • 2 (400g) tins chopped tomatoes
    • 3-4 medium garlic cloves
    • 1 medium red onion
    • 3 teaspoons chilli powder
    • 2 teaspoons salt (or measure to taste)
    • 1 teaspoon black pepper (or measure to taste)

    Directions
    Preparation:15min  ›  Cook:3hours  ›  Ready in:3hours15min 

    1. Open all the tins of beans into a colander to rinse and drain. Then put them in the slow cooker.
    2. Empty the tins of tomatoes into the slow cooker.
    3. Mince the garlic and chop the onions. Add to the slow cooker.
    4. Add the chilli powder, salt and black pepper. Taste along the way.
    5. Cook for at least 1 hour, longer if desired. Recommend 3 hours.

    This recipe was great but its WAY too much chilli powder. We adapted this to use 1 teaspoon chilli powder, 1 paprika and 1 cumin. We have this for dinner often - 07 Jun 2015

    This was a delicious and super simple vegetarian dish. I will definitely be making this often to go in the freezer and for me to eat when the rest of the family has meat. Three teaspoons of chilli powder was WAY too much- my mouth was on fire, even with rice. I think also serving with potato could work. - 15 May 2014
