Basic Chocolate Brownies

    These chocolate brownies are easy to make and after baking the outside will be crunchy while the inside is yummy and chewy.

    Serves: 12 

    • 230g butter
    • 75g cocoa powder
    • 4 eggs
    • 2 cups (435g) caster sugar
    • 1 teaspoon vanilla essence
    • 3/4 cup (90g) self-raising flour
    • 100g 60% chocolate, chopped
    • 100g walnuts or pecans, chopped

    1. Preheat oven to 180 degrees C. Grease a 20 x 30cm baking tin.
    2. Melt butter over low heat or in microwave.
    3. Add cocoa and stir until well blended and smooth; set aside.
    4. Beat eggs and sugar until light and fluffy.
    5. Add vanilla essence and beat to combine.
    6. Sift flour over top and fold in gently.
    7. Fold in chopped chocolate and nuts.
    8. Bake in the preheated oven until centre tests done with a skewer; about 30 to 40 minutes.
