This is a very basic houmous that consists of chickpeas, tahini, olive oil and garlic. From this recipe you can easily modify to tastes and trends.
2 (400g) tins chickpeas
2 large lemons, juiced
150ml tahini paste
60ml olive oil
2 garlic cloves, peeled and crushed
1 pinch salt and pepper, to taste
parsley, diced to garnish
- Put the chickpeas in a blender or food processor with the lemon juice then blend into a smooth puree.
- Add tahini paste, all but 10ml (2 teaspoons) of the oil, the garlic and seasoning. Blend until smooth.
- Spoon into a serving dish and sprinkle with reserved oil. Garnish with parsley. Serve with warm pita bread.
