Basic Houmous

    This is a very basic houmous that consists of chickpeas, tahini, olive oil and garlic. From this recipe you can easily modify to tastes and trends.

    Serves: 8 

    • 2 (400g) tins chickpeas
    • 2 large lemons, juiced
    • 150ml tahini paste
    • 60ml olive oil
    • 2 garlic cloves, peeled and crushed
    • 1 pinch salt and pepper, to taste
    • parsley, diced to garnish

    1. Put the chickpeas in a blender or food processor with the lemon juice then blend into a smooth puree.
    2. Add tahini paste, all but 10ml (2 teaspoons) of the oil, the garlic and seasoning. Blend until smooth.
    3. Spoon into a serving dish and sprinkle with reserved oil. Garnish with parsley. Serve with warm pita bread.
