Sultana Fruit Cake

    This is an easy to make fruit cake using fruit mincemeat and sultanas. It is a perfect after school treat for kids.

    Serves: 10 

    • 155g soft margarine
    • 2/3 cups (155g) caster sugar
    • 2 eggs
    • 2 cups (250g) self-raising flour
    • 2/3 cup (90g) sultanas
    • 500g fruit mincemeat
    • almonds, to decorate

    1. Preheat the oven to 160 degrees C. Grease and line a 20 cm round cake tin with baking paper.
    2. Place all the ingredients except the almonds in a bowl and beat for one minute until blended.
    3. Turn into the tin and smooth the top. Arrange the almonds on top and bake in an oven for about 1 3/4 hours until golden brown and shrinking away from the sides of the tin.
    4. Leave to cool in the tin. When cool remove from the tin and take off the paper; store in an airtight container.

    I found I had to add 100ml of milk . The mixture was a little to thick . It was quite rich and spicy , I would commend it .  -  29 Sep 2012


    Easy to make, I reduced the temp to 150 and only cooked it for 1hr 35min, but that's in a fan assisted oven. left the Almonds off the top as don't like them  -  19 Dec 2010  (Review from Allrecipes UK & Ireland)
