With key ingredients in this casserole including sausage, capsicum and beer it combines to a hearty meal and a wonderful winter warmer.


Serves: 4 

  • 1 tablespoon olive oil
  • 1 red onion, diced
  • 1 clove garlic, crushed
  • 1 green capsicum, diced
  • 8 sausages
  • 100ml beef stock, hot
  • 200ml beer, lager or bitter
  • 1 teaspoon tomato paste
  • 1 teaspoon vegemite
  • 1 (600g) tin tomatoes

  1. Preheat the oven to 180 degrees C.
  2. In a large saucepan heat the oil then add the onion and garlic and sauté for 2-3 minutes. Add the capsicum then sauté for a further 2-3 minutes. Add the sausages to the saucepan and brown on all sides.
  3. In a jug mix together the hot stock, beer, tomato paste and vegemite. Add the stock mixture to the saucepan along with the tinned tomatoes and simmer for 15 minutes.
  4. Transfer the sausage mixture to a casserole dish and cook in the oven for 30-40 minutes until gravy has thickened.
