Pasta Bake with Brie

    You won't find a pasta bake as cheesy as this one! The secret ingredient is Brie. Not a dish for every day, but delicious when you make it.

    Serves: 6 

    • 15g butter
    • 2 tablespoons olive oil
    • 1/2 onion, sliced
    • 1 garlic clove, crushed
    • 125g button mushrooms
    • 50-75g basil leaves, torn
    • 1 pinch salt and pepper, to taste
    • 250g penne
    • 2 tablespoons Parmesan, grated
    • 2 (400g) tins diced tomatoes
    • 300g Brie, rinded and diced
    • 200ml creme fraiche

    1. Melt the butter with 1 tablespoon of the oil in a frying pan then add the onion and garlic and fry for 5 minutes until softened.
    2. Add the mushrooms and cook for 2 minutes. Stir in most of the basil. Season with salt and pepper then remove from the heat.
    3. Cook the pasta until al dente. Drain and return to the pan then season and toss in a little oil. Sprinkle a little Parmesan cheese into the pasta.
    4. Drain the juice from the tomatoes into a bowl.
    5. Stir the tomatoes and the Brie into the mushroom mixture and stir the creme fraiche into the tomato juice. Add the mushroom mixture and the creme fraiche to the pasta, toss, sprinkle with the remaining Parmesan and a few more basil leaves.
    6. Cook in a preheated oven at 180 degrees C for about 40 minutes.
