Broccoli and Sweet Potato Soup
This is a lovely broccoli and sweet potato soup that I like to serve in a bread bowl but served with fresh crusty bread is just as good.
Ingredients
Serves: 4
- 1 litre vegetable stock
- 2 sweet potatoes, diced
- 1 onion, diced
- 1/2 medium sized broccoli
- 1 fresh chilli, diced
- 2 teaspoons garlic puree
- 1 teaspoon hot chilli powder

- In a large saucepan bring stock to the boil.
- Add the sweet potato and onion to the boiling stock.
- When the sweet potato is soft add the rest of the ingredients and leave simmering for 5 minutes.
- Add the mixture to a food processor or blender and blend for 10 seconds or until your desired consistency then serve.
