Capsicums Stuffed with Mushrooms

    Capsicums are stuffed with a variety of mushrooms including button, oyster and shiitake then finished off in the oven with a layer of mozzarella cheese.

    Serves: 4 

    • 1 tablespoon cooking oil
    • 1 large onion, finely diced
    • 200g button mushrooms, finely diced
    • 75g oyster mushrooms, finely diced
    • 75g shiitake mushrooms, finely diced
    • 2 small chillies, finely diced
    • 1 pinch salt and pepper, to taste
    • 4 capsicums any colour, halved and seeded
    • 130g mozzarella cheese, thinly sliced
    • 1 dash olive oil with basil

    1. Preheat oven 180 degrees C.
    2. Heat oil in a frypan then add the onions, mushrooms and chillies. Cook until soft then add salt and pepper to taste and stuff the halved capsicums with the mixture.
    3. Place sliced mozzarella on top of the capsicums. Place on a lightly oiled baking tray.
    4. Drizzle olive oil over stuffed capsicums and place in the oven. Cook until cheese is golden.
