Chicken Stuffed with Garlic Mushrooms

This is a family favourite of ours that we serve with garlic buttery mash. It is a flavoursome and succulent chicken breast that is stuffed with mushrooms then wrapped in bacon then finished in the oven in a thick barbecue tomato sauce topped with melted cheese.


Serves: 2 

  • 2 chicken breasts
  • 4 rashers bacon
  • 100g mushrooms, sliced
  • 1 medium sized onion. sliced
  • 1 clove garlic, crushed
  • 1 teaspoon Italian herbs
  • 1/2 (400g) tin diced tomatoes
  • 4 tablespoons bbq sauce
  • 30g butter
  • 1 tablespoon oil
  • 150g cheddar cheese, grated

  1. Preheat oven to 190 degrees C.
  2. Cut a pocket in each chicken breast then add a small amount of butter and garlic followed by the mushrooms.
  3. Wrap the chicken in the bacon with 2 rashers to each breast making sure the pocket of the chicken is well covered so nothing falls out.
  4. In a large ovenproof frypan add the oil then sear the chicken and bacon turning frequently so that it does not brown too much. Add the sliced onion into the frypan around the chicken breasts.
  5. Add the Italian herbs, diced tomatoes, bbq sauce to the frypan then mix together making sure the chicken is covered. Sprinkle the frypan with cheese.
  6. Place in the preheated oven for 30 minutes or until chicken breasts are cooked.
  7. Cut each breast into 2 pieces revealing the stuffed garlic mushroom centre then place on large plate. Spoon over some of the tomato bbq sauce. Serve with garlic mash and green beans.
