Strawberry Jelly Cupcakes

    These cupcakes have strawberry jelly crystals as an ingredient in the cake mixture along with lots of fresh strawberries and cream.

    Serves: 12 

    • 200g flour
    • 150g sugar
    • 1/2 teaspoon salt
    • 2 teaspoons baking powder
    • 1 packet strawberry jelly
    • 2 small eggs
    • 150ml cream
    • 100ml sunflower oil
    • 400g strawberries, diced
    • Icing
    • 100g icing sugar, sieved
    • 250g mascarpone cheese
    • 1 teaspoon vanilla essence
    • 1 drop red food colouring
    • hundreds & thousands or sliced strawberries, to decorate

    1. Preheat oven to 200 degrees C and prepare your cupcake tray.
    2. Sieve together your flour, salt, baking powder and jelly crystals. Add your sugar.
    3. Beat together your egg, cream and oil.
    4. Add the wet ingredients to the dry ingredients and blend together until smooth.
    5. Stir the diced strawberries into the cake mixture.
    6. Spoon into prepared tray and bake for 20-25 minutes.
    7. Meanwhile, prepare the icing by beating together all your ingredients until smooth.
    8. When cupcakes are cool spread on the icing and sprinkle with hundreds & thousands or for a bit more refinement use sliced fresh strawberries.
