Steak, Vegetable and Ale Pie

    Ale comes together with beef, carrots and leeks in this hearty pie. Serve with a selection of buttered root vegetables and homemade creamy mash potato and of course more Ale!

    Serves: 6 

    • 630g casserole steak
    • 2 short sprigs rosemary
    • 3 sprigs marjoram
    • 1/2 bottle (185ml) beer preferably an Ale
    • 1 dash olive oil
    • 4 tablespoons flour
    • 2 carrots, diced
    • 1 leek, diced
    • 1 onion, diced
    • 1 cup (250ml) beef stock
    • 1 sheet puff pastry

    1. Night Before: Put steak into medium sized bowl with lid. Add rosemary and marjoram and mix with meat.
    2. Add beer, a splash of oil and some fresh black pepper. Mix well. Cover and marinate in fridge overnight.
    3. Making the Pie: Preheat oven to 180 degrees C.
    4. Strain beef from marinade; reserve the marinade. Roll beef in flour until beef is covered.
    5. Saute onion, leek and carrots in olive oil. Cook until onions are soft. Remove from frypan and set aside. Place beef in frypan and brown.
    6. When beef is browned put the vegetables back in and add beer marinade and beef stock. Simmer on medium heat for 10 minutes.
    7. Transfer mixture to pie dish. Top with puff pastry and trim sides. Pierce pastry a few times for ventilation, add decorative pastry leaves if desired.
    8. Bake in preheated oven for 40-45 minutes.
