Chicken and Bacon on Noodles

    This is a very economical and easy chicken dinner that can be even easier if you buy a pre-cooked hot chicken.

    Serves: 4 

    • 1 (1.75kg) whole chicken
    • 100g bacon
    • 1 medium onion
    • 50g butter or margarine
    • 2 tablespoons honey
    • 250ml chicken stock
    • 1 tablespoon dried of fresh parsley
    • 1 pinch salt, to taste
    • 1 pinch black pepper, to taste
    • 4 serves noodles

    1. Cook the chicken in a oven preheated to 250 degrees C for about 1 1/2 hours or until the liquid running from it is clear. Once the chicken is cooked strip the meat from it and discard the bones.
    2. Melt the butter in a wok or large frying pan. Add the chicken and bacon then fry for 10 minutes turning frequently.
    3. Add the onion. Stir in the honey, chicken stock and parsley. Season with the salt and pepper to taste. Simmer for 10 minutes.
    4. Meanwhile cook the noodles according to packet instructions. Serve the chicken mixture on the pasta.
