Coriander Raita

    A simple raita with yoghurt, spring onion and coriander it is lovely served as an accompaniment to curries or alone as a dip.

    Serves: 4 

    • 4 spring onions, diced
    • 2 tablespoons coriander stalks, finely diced
    • 1/4 teaspoon sugar
    • 1 pinch salt and pepper, to taste
    • 4 tablespoons yoghurt

    Preparation:10min  ›  Extra time:30min soaking  ›  Ready in:40min 

    1. Soak the spring onions in iced water for 30 minutes. Drain and pat dry with paper towel.
    2. Mix the sugar, coriander, salt and pepper with the yoghurt and then stir in the spring onions.
